  1. Heat a frying pan over medium heat with a little oil and place a non-stick ring in the pan. Press the sausagemeat into the ring and flatten out to fill the ring. Cook over medium heat until browned and cooked through. Remove and set aside, keep warm.
  2. In the same ring, gently crack an egg into it. Over low heat cook the egg, cover the pan with a lid. After a few minutes, very gently flip the egg over, still in the ring and cook for another couple of minutes.
  3. Meanwhile, toast the muffin.
  4. Layer the cheese and sausage patty on the bottom muffin. Top with the egg and a little tomato ketchup. Place the muffin top on and enjoy.


Depending on the width of your cooking ring and size of sausage used, you may want to split the cooked sausage patty in half to have 2 equal rounds.

Think of these Egg Muffin Cups as mini-frittatas. They are made with very minimal ingredients, filled with great flavor and textures from the creamy potatoes and meaty sausage. They make a great make-ahead breakfast too! My kids love them, which makes me so happy!

I feel like calling this the frittata of all frittatas but I won't because I really love my breakfast frittata and this plantain frittata. I also really love a good potato frittata. I have shared a potato frittata on my Facebook page before but just not on the blog. I should bring the recipe to the blog someday.

These Egg Muffin Cups are basically mini-frittatas. I wanted to make egg muffins that were so simple. You mix simple ingredients and pop them in the oven for a quick meal. And these are truly simple! The main ingredients include eggs, potatoes, sausage, onion, and seasoning. Finito!

If you love, you could add veggies to them. Egg Muffin Cups are so versatile! You could load them with veggies, load them with carbs, meats or make them plain and simple like this.

But don't confuse plain and simple for dumb and boring. These are not boring one bit! The soft creamy potatoes and the meaty chicken sausage with the eggs is a combo that works wonders for the taste palate. Also, the onion gives them a nice kick, balancing out the flavors beautifully!

1 Lb package of Sausage (we prefer the Maple flavor)

1 cup Milk (if you have buttermilk they’re even better!)

8oz shredded Cheddar Cheese

Preheat oven to 350 degrees.

Brown sausage, crumble, and drain from grease…set to side to cool.

Mix together butter, milk, and egg.

Add Bisquick into wet ingredient mixture.

Make sure Bisquick is mixed well and add in the shredded cheese.

Spray muffin tins with non-stick cooking spray.

Once sausage is cool mix into Bisquick mixture.

Fill muffin tins with batter.

Bake at 350 degrees for 15 minutes or until baked through– muffins will be golden brown and when a toothpick is inserted it will come out clean.

1/2 cup shredded Cheddar Cheese

1/2 teaspoon salt

1/2 cup milk

2 tablespoons cornstarch

2 tablespoons grated Parmesan cheese

1 tablespoon vegetable oil

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon ground black pepper


Preheat oven to 350°F. Spray muffin cups with cooking spray. Divide Skillets mixture evenly into muffin cups.

Combine milk and cornstarch in a small bowl mixing until corn starch is dissolved. Beat eggs, milk mixture, Parmesan cheese, oil, garlic and onion powder, salt and pepper in large bowl with wire whisk until well blended. Pour mixture evenly over Skillet mixture in baking cups.

Bake 30-35 minutes or until toothpick inserted in center comes out clean. Sprinkle cheese evenly over eggs cups. Let stand 5 minutes before removing from muffin pan.
